The Bistro, top floor, upscale flagship restaurant at Fantasy Springs Resort Casino in Indio, is the focus of this report, but all dining here, from snacking to several courses, is dependable. Food/dining is a major concentration under the skilled, 16-year experience of executive chef Perry Mascitti, who is particularly adept at managing dining facilities for starred hotels and large casinos.
Our most recent visit to The Bistro was on that Saturday night when our valley was crowded with extra visitors in the area for the mammoth Coachella Music Festival. Since The Bistro offers reservations only for parties of 8 or more, we took our chances at 6:30 p. m. , left our car with valet parkers at the main entrance to the casino, walked briefly through a slot machine area to choice of escalator or self-run elevator up to The Bistro level.
We chose the latter and were fortunate to have our party of three assigned at once to an ample, pre-set table for four. By 7 p. m. , the graceful room, a loose L-shape, with smaller adjacent room for overflow or private parties, was almost filled.
